With a jar of discard full to the brim I had to make a decision on what to make this weekend. There are so many recipes out there but I decided to start with this simple Farmhouse on Boone dutch baby pancake.
I followed her recipe closely. The only difference was that I didn’t have a 12″ cast iron so I used my 10″ one and cooked it an extra two or three minutes. I will say, she did not specify what butter to use so I defaulted to salted and thought it tasted great in contrast with our sweet toppings. I served it with a sprinkle of powdered sugar, syrup and fresh strawberries. The texture kind of reminds me of french toast or bread pudding which are two of my favorites. For portions, 6 people could eat it if they had one humble slice, and you served it with a protein. Ryan was pretty hungry from working outside so we ate half of it. Let’s be honest this is dessert in the same way that pancakes and French toast are, but we of course ate it and called it breakfast. I mean sourdough is good for the gut right? So it is healthy. I will be adding this recipe to my brunch favorites on the google drive and would recommend it to anyone with a discard jar getting full. It feels so good to not let any of it go to waste.
Weekend Wrap Up
The weekend went quick but was full of all the things we enjoy. We hosted friends for dinner Friday, and family Saturday and Sunday. Ryan worked in the garden pruning overgrown herbs and raking leaves, while Davy James and I went to work in the kitchen. He is so amused watching me measure, pour and mix while he sits on the counter. We are hoping that he learns to love cooking just as much as we do. He will be licking the spoon before we know it.
