Davy James loves being outside, so this freezing weather has us stir crazy in the house. He is all about hands on activities so I am keeping him busy, and me sane, by baking all kinds of things together. My discard jar is almost full so we decided to try out a cracker recipe. The original recipe is from Artisan Sourdough Made Simple by Emilie Raffa.
Original Recipe
- 1 cup (120g) all-purpose flour
- 1/2 tsp fine sea salt
- 1/4 cup (60g) sourdough discard
- 4 tbsp (56g) unsalted butter, cold, cut into small cubes
- 8 oz (227g) gruyere cheese, grated
- 2 tbsp (20g) grated parmesan cheese
- 6 sprigs of thyme, leaves picked
- 3 to 4 tbsp (45-60ml) cold water, plus more as needed
My Modifications
- 1 cup (120g) all-purpose flour

- 1/4 cup (60g) sourdough discard
- 4 tbsp (56g) unsalted butter, cold, cut into small cubes
- 7 oz (227g) gruyère cheese, grated (used less because I didn’t have a full block of cheese)
2 tbsp (20g) grated parmesan cheese(I actually forgot to add this)6 sprigs of thyme, leaves picked(Substituted for 1 tbsp of ground rosemary)- 4 tbsp cold water

Add all ingredients to food processor, with 1 tbsp (15ml) cold water. Pulse until tiny crumbs form. Add more water to bring together, but take care not to over-mix. Flatten dough into a disc, cover with plastic wrap and chill for a least 30 minutes.
Preheat oven to 325. Line sheet pan with parchment paper. Divide dough in two pieces and roll it out on another sheet of parchment paper. Can use flour if things start sticking. She recommended rolling it out to 1/8″, I did 1/16″. She recommends a 1 1/2″ cookie cutter, I just used the smallest cutter I had which was the size of a penny. Lay your crackers on parchment a finger width apart and score (poke a hole) in the middle of them with a toothpick. Place in fridge for 5 to 10 minutes before baking.
Bake until golden brown. In my oven it took about 20 minutes. Store in an airtight container for up to 3 days. Enjoy!
